Vacuum tumblers are designed to remove air and draw moisture and marinade into the meat.

During tumbling process, marinade is throwned repeatedly into the product, massaging it into the meat to generate moist product full of flavour. Vacuum tumbling is hugely beneficial in marinating because of moisture retention and decreased time necessary for marinating meat.
