Indirect heating is provided by INCOLOY jacketed heating elements with steam circulation. The pressure in the jacket is controlled by a safety valve. Analog pressure gauge and safety thermostat. Switch for power adjustment in three positions. Operating thermostat to regulate the temperature inside the cooking container.
