The new horizontal vacuum diffusion unit was developed in cooperation with our customers processing vegetable alternatives to cottage cheese, processing soybeans and other types of vegan products.
Equipment was developed for the production of juicy thick tofu with minimal air content and longer shelf life. In addition, the rapid dual cooling system reduces operating costs and increases productivity.

The principle of function
The device consists of a horizontal working chamber made of stainless steel AISI 304 with a part for inserting boxes During the process, food boxes with the product are inserted into the chamber. The device is designed for boxes with a load capacity of up to 25 kg. After closing the side cover, the valve opens to fill the working chamber with liquid (water, solutions, brine-saline, etc.). When the desired fluid level is reached, the valve closes and the vacuum is turned on. The system removes air from the chamber and parasitic air bubbles from the product, after reaching a deep vacuum on the product, the process of intensive boiling of water begins, thanks to which intensive vacuum cooling takes place. When deaerated, cavities are formed in the product, which are then filled with water or aromatic additives by means of a pulsating vacuum (vacuum diffusion).
