The CookMak Mix is an electric tilting cooking kettle with an integrated agitator system for professional batch production. It is designed for cooking, heating and mixing liquid, semi-viscous and thicker food products such as sauces, soups, jams, fruit preparations, creams, fillings and syrups. The tilting system enables efficient mixing and complete product discharge, while the heated sandwich bottom ensures uniform heat transfer. It is available in working volumes from 20 to 150 liters.

How the equipment works

The CookMak Mix combines controlled electric heating with continuous mixing and a tilting working vessel. The mixer ensures consistent product movement during processing, while the tilting mechanism allows the product to be processed at an inclined angle and efficiently discharged after production.

Heating

Electric heating integrated into a multi-layer sandwich bottom gives uniform heat transfer. The insulated stainless-steel casing retains heat and reduces heat loss.

Mixing

The integrated mixing system keeps the product moving during heating. Mixer configurations range from gentle mixing of liquid products to stronger mixing and scraper-equipped versions for thicker mixtures.

Tilting

The tilting mechanism positions the vessel at different angles for gravity-assisted mixing and easier unloading. The maximum 110° position gives efficient discharge and low product retention.

Gravity mixing

Tilting creates an additional gravity-assisted effect: the product moves toward the lower side while the mixer circulates it through the batch — improving circulation and mixing efficiency with larger batches and thicker products.

CookMak Mix - 28 Key Features

 

HEATING

1. Built-in electric heating

Heating is integrated into the multi-layer bottom of the working vessel, so heat passes across the product-contact surface without direct exposure of the elements to the product, and no external heat source is required. Available with 2.6 kW or 6.5 kW heating power, matched to vessel size, batch and product. Suitable for cooking, heating and holding temperature in liquid, semi-viscous and thicker food products.

2. Multi-layer sandwich bottom

The multi-layer sandwich bottom contains the electric heating system and distributes heat evenly across the bottom, reducing localized overheating and supporting uniform heating of the batch. The elements stay enclosed in the bottom construction, leaving the product-contact surface smooth, unobstructed and easy to clean; combined with continuous mixing, the product is constantly moved through the heated area.

3. Stainless-steel outer casing with air thermal insulation

The heated vessel is surrounded by a stainless-steel outer casing with a hermetically sealed air layer. The sealed layer also contributes to heat transfer: hot air from the heated lower section rises along the vessel walls and returns heat to the vessel, so heat comes not only from the bottom elements but also through the lower and side walls — giving more uniform heating and better use of the supplied energy. At the same time the insulation reduces heat transfer outwards, keeping external surfaces cooler, improving operator comfort and reducing heat loss. The smooth casing also protects the vessel and heating construction, and is easy to clean.

4. Six-stage mechanical heating control

A six-stage mechanical heating control allows direct adjustment of heating intensity to the product, process stage and measured temperature — higher at the start, reduced as the required temperature is approached — without a complex electronic interface. For automatic regulation it can be replaced by the PT100-based PID temperature-control system.

5. Professional bimetallic thermometer

A professional industrial bimetallic thermometer with a range up to 120 °C gives direct visual monitoring of product temperature without an electronic display, positioned for easy reading during operation. It is used together with the six-stage mechanical heating control so heating intensity can be matched to the actual temperature; for automatic regulation it can be replaced by the PT100-based system.

6. Automatic temperature control with PT100

For precise and consistent regulation, an automatic temperature-control system with a PT100 sensor and PID controller is available. The PT100 measures product temperature continuously and the controller regulates heating to the selected setpoint, reducing manual adjustment and holding stable temperatures during longer cycles. The Autonics TC4S PID controller displays actual process temperature and setpoint simultaneously and provides two independent alarm outputs (AL1 and AL2) for temperature-limit monitoring, process indications or other external signals.

The heating system also incorporates independent over-temperature protection, operating separately from the normal control function and interrupting the heating circuit if excessive temperature is detected. The PT100 system is an alternative to the six-stage mechanical heating control.

LID

7. Removable lid with integrated mixing system

A removable stainless-steel lid with the mixing system integrated directly into the lid assembly keeps the mixer securely positioned above the vessel while allowing the complete assembly to be removed quickly for cleaning, inspection and maintenance, without complicated disassembly or special tools. Different mixer attachments can be used according to the product and required mixing action.

8. Large opening hatch covering almost half of the lid

The lid includes a large opening section covering almost half of the lid surface, giving access to the vessel without removing the complete lid and mixer assembly. Operated by its handle, it allows the operator to inspect the product, monitor processing and add ingredients during operation. It can be secured open using the dedicated fastening arrangement and integrated lid holder.

9. Special lid holder integrated into the supporting frame

The supporting frame is equipped with a dedicated lid holder for safely positioning the opened lid section during operation. Placing it in the holder keeps both hands free for adding ingredients or inspecting the product, keeps the opening away from surrounding equipment and surfaces, and eliminates the need for separate storage or support.

10. Omega-shaped fastening system for the opening hatch

The opening section is secured by a specially shaped Omega-type fastening mechanism, giving secure retention with manual release when access is required. It keeps the opening closed during cooking and mixing, is compact with minimal components protruding into the working area, and is designed for frequent opening and closing.

11. Twist-lock fastening system for the removable lid and mixer assembly

The complete lid and integrated mixer assembly is secured by a special twist-lock fastening system for quick installation and secure retention. Each fastening point uses a shaped locking plate: the lid is positioned, rotated to engage the locking points and secured with fastening bolts, allowing quick removal without complicated disassembly. The locking geometry prevents accidental release — the lid comes off only after deliberate rotation back to the release position. It also stays secure with the mixer running in both rotational directions, making it compatible with reversible FWD/REV mixing when a frequency converter is installed.

MIXING

12. Selection of mixer attachments

Different mixer attachments are available according to the product, viscosity and required mixing action:

  • Anchor mixer — for liquid and semi-viscous products requiring gentle, uniform movement.
  • Paddle mixer — for thicker products requiring stronger mixing action.
  • Bottom scraper system — continuously removes product from the heated bottom, improving heat transfer and reducing buildup.
  • Side scraper system — continuously removes product from the vessel walls, maintaining product movement and reducing buildup.
  • Lira (harp-type) mixer — for cutting and breaking up product curds or solid pieces, such as cheese curds.

In scraper-equipped configurations, the self-adjusting scrapers follow the vessel wall and bottom radius, continuously renewing the product layer in contact with the heated surfaces — improving heat transfer and circulation while reducing buildup and burn-on.

13. Quick-change Tri-Clamp mixer attachment system

The mixer attachment connects to the mixing shaft with a 1.5" Heavy-Duty Tri-Clamp Band Clamp (Single-Pin, 304) — a secure, hygienic connection that can be opened and tightened manually without special tools, allowing attachments to be changed in just a few seconds. The attachment separates from the shaft without complicated disassembly while remaining firmly secured during operation.

14. Variable mixing speed with frequency converter

An optional frequency converter provides stepless mixing-speed adjustment according to the product, viscosity and processing stage: lower speeds for gentle movement and higher speeds for stronger mixing, within the limits of the selected motor and attachment and without mechanically modifying the mixer or gearbox.

The motor, mixer attachment and required speed range must be considered together, as available torque changes with operating speed. The converter also provides reversible FWD/REV rotation, useful for dense or high-viscosity products and for helping to free the mixer attachment when required. It is compatible with the secure twist-lock lid fastening system.

TILTING

15. 13-position tilting system for gravity-assisted mixing

The tilting system provides 13 different working positions, allowing the vessel angle to be adapted to the product, viscosity, mixing action and processing stage. These positions support gravity-assisted mixing: as the vessel is inclined, the product moves toward the lower side under gravity while the mixer continuously returns and redistributes it, creating an additional circulation effect without relying entirely on high-speed mechanical mixing.

This is particularly beneficial for larger batches, semi-viscous products and thicker mixtures, helping improve ingredient and temperature distribution throughout the batch. The same tilting system is also used for product discharge.

16. Maximum 110° tilt angle for efficient product discharge

The vessel tilts to a maximum angle of 110°, the 13th and final position of the tilting system, beyond the normal mixing angles for efficient discharge. Gravity assists product movement toward the vessel opening and through the pouring lip, helping reduce product remaining in the vessel. The discharge arrangement can include a pouring lip, outlet valve, or both.

17. Optional automatic electric tilting

An automatic electric tilting system is available as an alternative to manual mechanical tilting. The operator controls the vessel position from the designated control system, making repeated changes between mixing, working and discharge positions easier and reducing physical effort with larger vessels or heavier products.

18. Reverse tilting / opposite-direction tilting

The tilting system also allows the vessel to be positioned one tilt step in the opposite direction, changing the direction in which the product moves and accumulates inside the vessel. This can be useful for collecting product at the opposite side, adjusting product movement, allowing part of the batch to settle in a different area, or during ingredient addition, scraping and discharge preparation.

For manual tilting, the kettle has a rubber-covered handle providing a secure and comfortable grip. The non-slip surface helps maintain firm control when moving the vessel between tilting positions, while the vessel remains supported by the tilting and counterbalance mechanism.

20. Counterbalanced tilting system with calculated center of gravity

The tilting mechanism is designed around the calculated center of gravity of the vessel and its expected load, helping keep the kettle controlled during tilting. The counterbalanced arrangement reduces the effort needed for manual tilting and accounts for vessel geometry and weight distribution across the operating range.

Together with the 13 working positions and 110° maximum angle, it supports gravity-assisted mixing, normal operation and controlled product discharge.

SAFETY, DISCHARGE, MOBILITY & HYGIENE

21. Lid-opening safety sensor or protective safety grille

For applications requiring mixing speeds higher than 8 RPM, a lid-opening safety sensor is available. When the opening section is lifted, it automatically stops the mixing motor, preventing access to moving mixer components during operation.

As an alternative, the opening can be protected by a safety grille, as commonly used with milk pasteurizers.

22. DN50 food-grade outlet valves

A DN50 food-grade outlet valve provides controlled product discharge from the bottom of the vessel and can be fitted with either a butterfly valve or ball valve. The DN50 connection provides a relatively large product passage for efficient discharge in a compact size and can be used in the standard or a suitable tilted position.

The outlet can be used instead of, or together with, the pouring lip. The specially shaped pouring lip provides a smooth, controlled laminar flow when the vessel is tilted, directing liquid and semi-viscous products into containers while reducing splashing.

23. GN container for direct product discharge

A support for a standard GN container or integrated bottom tray can be positioned below the tilted vessel for direct product collection through either the pouring lip or outlet valve.

It accommodates standardised GN containers up to 150 mm high; for the 50 L configuration, a standard GN 1/1 container, 150 mm high. Product can be collected directly without a separate collection vessel, simplifying handling for cooling, storage, further processing or transport.

24. Stainless-steel caster wheels with brakes

Robust stainless-steel caster wheels with integrated brakes allow convenient movement and secure positioning. Two fully rotatable braked wheels simplify positioning, two fixed wheels provide directional stability, and rubber elements help reduce vibration during movement.

For fixed installations, the wheels can be replaced by height-adjustable legs with rubber feet, allowing the working height to be fine-tuned and the kettle to be levelled.

25. Control panel integrated into the outer casing

A centralized control panel in a sealed enclosure brings the main electrical and process-control functions together in one location:

  • Autonics TC4S PID controller — automatic temperature regulation using the PT100 sensor; simultaneous display of actual process temperature and setpoint; two independent alarm outputs (AL1 and AL2).
  • Autonics ATE8 cycle timer — repeatable processing or mixing times with selectable ranges of 1 s, 10 s, 1 min, 10 min and 1 h.
  • Frequency inverter — stepless agitator-speed adjustment and FWD/REV mixing direction.
  • Lockable main isolator switch (0 / I) — complete electrical disconnection, with lockable OFF position for cleaning, maintenance and servicing.

The panel allows temperature, processing time and mixing speed to be controlled as defined parameters, supporting repeatable production between batches. The sealed enclosure also protects the electrical components from the surrounding production environment.

26. Stainless-steel working surfaces

The internal working surface is designed for professional food-processing applications, providing a smooth, hygienic product-contact surface for cooking, heating and mixing. The vessel is manufactured from food-grade AISI 304 stainless steel, providing a durable and corrosion-resistant construction. The smooth surface reduces product buildup and makes cleaning between batches easier.

The mixing drive and gearbox are enclosed by a stainless-steel hygienic cover, protecting the mechanical components above the working vessel from splashes, product contamination and the production environment. The smooth cover is easy to clean while keeping the drive securely enclosed during operation.

28. Removable basket for cooking and processing products with solid pieces

A removable processing basket is available for solid ingredients that need to be cooked or processed separately from the main liquid phase, such as fruit pieces, vegetables, herbs and other ingredients requiring controlled immersion and subsequent removal.

The basket can be lifted from the vessel after processing, allowing its contents to be removed without discharging the entire mixture. This is useful for ingredients that need to be cooked, infused, softened or processed in liquid before removal, or that must remain contained during processing. The removable design also simplifies emptying and cleaning.

The CookMak Mix is a configurable tilting cooking and mixing kettle available in different vessel volumes and equipment configurations.
