De rol van homogenisatoren

Werkingsprincipes van de homogenisator

Homogenisatoren maken gebruik van mechanische kracht om deeltjes te verkleinen en uniform te mengen. Het proces bestaat uit het forceren van het mengsel door een smalle opening of klep, wat resulteert in hoge schuifkrachten die deeltjes afbreken en zorgen voor grondige menging. Homogeniseren verbetert niet alleen de textuur van het product, maar verlengt ook de houdbaarheid door roomafscheiding te voorkomen en de stabiliteit te verbeteren.

Soorten homogenisatoren

Rotor-stator homogenisator - Met behulp van een rotor en stator creëren deze apparaten intense schuifkrachten om deeltjesreductie en uniforme menging te bereiken. Verkrijgbaar in twee configuraties:

  • Continue homogenisatoren: Deze homogenisatoren bestaan voornamelijk uit een motor met een rotor en een stator in een deksel en zorgen voor een continue verwerking.
  • Werkende batch-eenheden: Deze homogenisatoren worden geleverd met een werkunit en een ingebouwde homogenisator, ideaal voor verwerking in batches.

Toepassingen in de voedingsindustrie

Homogenisatoren worden op grote schaal toegepast in verschillende voedingsmiddelen:
