Honey drying is used in cases where the moisture content of honey exceeds 20%. The optimum moisture quality honey is 17-18%. Excessive moisture in the honey due to its early harvest or poor quality results in separation and fermentation.

Bees spend a considerable amount of time and effort to finish honey in the hive. The possibility of drying honey after it is removed from the hive greatly increases the harvest of honey per season.
Honey dryers have been specially designed for honey, taking into account all the characteristics of this sensitive product. They effectively remove moisture without heating or with low heating temperature in a short time, which does not lead to increased hydroxymethylfurfural (HMF) content. Hydroxymethylfurfural is formed by heating glucose and fructose. The presence of HMF in the honey indicates that it is old or over-heated. 5-HMF is suspected of cytotoxic genotoxic effects on the human body. The World Health Organization Codex Alimentarius and the European Union set a maximum level of 5-HMF honey at 40 mg / kg. Slovak and Czech honey has a stricter standard of 15 and 20 mg / kg. Not only the elevated temperature, but also the time at which this temperature is acting is important for HMF. short heating to 60 ° C causes almost no increase in HMF. However, long-term storage at 40 ° C will increase HMF content in just a few weeks.
It is known that otherwise, the removal of moisture under vacuum is more effective than at atmospheric pressure because of the easier breakdown of molecular bonds. However, another innovative solution has been implemented in the HD1500 honey dryer - intensive forced air drying in the dryer chamber, resulting in performance close to the performance that would be achieved with the vacuum system. In addition, a special mixer design provides the greatest possible evaporation area using the "waterfall" principle.
WORKING PRINCIPLE
The HD3000 dryer works on a condensation principle. Dry, warm air dries the honey and binds the moisture evaporated from the honey. Moist air is not drained out of the dryer but condensed on the cold heat pump evaporator. The air from which the moisture is removed is conveyed by the fan to the heat pump, where it is heated and again enters the dryer and dries the honey. The dryer operates at 5-95 ° C with minimal energy loss and extremely low operating costs. However, when drying honey, the temperature should not exceed 40 ° C in order to avoid damaging the sensitive substances in the honey. When honey is heated above 50 ° C, the content of enzymes in honey and other valuable substances is rapidly reduced.
For more efficient drying, the dryer can also have a heating of the jacket in the working vessel. The special circular disc stirrer rotates to ensure maximum heat transfer. The specially shaped blades increase the adhesion of the honey, which then flows in the various so-called "waterfalls", thereby significantly increasing the evaporation area. Special scrapers located between the stirrer discs clean the working vessel walls from stucked honey.
TECHNICAL DESCRIPTION
The HD1500 condensation dryer consists of a working vessel of high-quality AISI 304 stainless steel (or AISI 316) on request, equipped with a specially shaped disc, spiral or multi-plate stirrer, condensing unit, thermometer and electronic moisture measurement. The dryer operates at 35-40 ° C with minimal energy losses and extremely low operating costs.
ADDITIONAL OPTIONAL EQUIPMENT
The honey dryer can be equipped with a thermostat, PLC control, recirculation and filtration system to clean honey from wax fragments, propolis, bee parts and the like. The filter system is equipped with removable stainless steel mesh.
