Distillers are processing systems that separate volatile components from liquids or plant materials through evaporation and condensation. The process involves heating the feed material to release volatile compounds as vapour, which is then cooled in a condenser and collected as a liquid distillate. The composition of the distillate depends on the raw material, operating temperature, pressure and distillation method.
In food processing, distillation is used for extracting aromatic compounds and essential oils from herbs and other botanical materials, as well as in certain beverage-processing applications. Steam distillation is commonly used for essential oil extraction, allowing volatile aromatic compounds to be carried with the steam and recovered after condensation. Vacuum distillation operates at reduced pressure, lowering the boiling temperatures of volatile components. This principle is applied in specialised processes such as wine dealcoholisation, where reducing thermal exposure can help preserve selected aroma compounds.
Distillation equipment typically includes a processing vessel, a heating system, a vapour outlet, a condenser and a collection vessel. Depending on the application, additional components may be required to separate oil and water phases or control pressure, temperature and vapour flow.
