The topic of cooling is quite broad, as the function of cooling is necessary in all types of food production. Therefore, to increase efficiency and reduce the time required to lower the product's temperature, technical solutions in the form of different types and kinds of equipment are used.
The product can be cooled at different stages of production:
- during raw material intake, for example, cooling milk, cooling fruits and vegetables after harvesting
- after thermal processing (boiling, frying, etc.) before the next production stage (at some point in the process depending on the technology and recipe)
- after pasteurization / sterilization
- before packaging with vacuum packaging systems.
The concept of a cooling system is not identical to the term refrigeration system.
They differ from each other as a general and a specific concept, with the cooling system being a component of the refrigeration system.
Therefore, the cooling section can also include cooling systems, chilled water stations, which are necessary for auxiliary processes of food equipment. Most often, this is associated with vacuum systems, where it is necessary to cool the water to a certain temperature before feeding it to the condenser or for feeding it to the cream jacket during the production of creamed honey.
The purpose and technical conditions of cooling are determined based on the stage of production, which directly influences the operating mechanisms and the type of cooling or refrigeration equipment used.
The primary goal of cooling raw materials or unprocessed products is the ability to prevent or reduce the growth and activity of microflora, in particular bacteria. The optimal condition - is to cool the product down to a temperature of 4°C, where the growth and activity of microorganisms slows down significantly.
In the case of tank equipment for cooling milk, milk coolers with built-in or additional cooling sources are used.
Additional consumer benefits of cooling include: maintaining the integrity of the product structure, its individual texture, freshness and extending shelf life.
A special category of cooling equipment consists of units that cool products before they are packed, particularly before vacuum sealing, such as for the packaging of bakery products.
Bread is always cooled to room temperature, but due to the risk of contamination with natural cooling methods, producers have shifted to industrial vacuum cooling systems. These devices, thanks to deep vacuum, remove excess moisture from the bread, achieving not only rapid cooling but also specific product characteristics: airy texture inside and a crispy crust outside. Bakery products are often wrapped in film, so the product must not be hot or damp before packaging; otherwise it may lose its appealing consumer qualities — it may delaminate, become flaky or develop mold. One of the technical requirements for using vacuum packers is the necessity to always cool hot products before vacuum packaging.
For the function of cooling in food processing, systems are most commonly used to halt the cooking or frying process, or to cool the product after thermal treatment such as pasteurization or sterilization.
Some systems are designed to provide immediate cooling as the product moves from one processing section to another, such as cooling conveyors. Additionally, some continuous processing systems have dedicated cooling sections, such as Cook and Chill type cooking kettles and blanchers, continuous pasteurizers, and conveyor ovens.
