The Combifry continuous fryer is a professional industrial frying system designed for uniform thermal processing of food products using a conveyor-based transport system combined with active hot oil pouring / spraying system. The integrated conveyor ensures controlled product movement through the frying zone, while the oil spraying/pouring system provides even heat exposure from all sides.

The Combifry continuous fryer is designed for industrial food processing applications requiring consistent product quality and efficient throughput. It combines conveyor-based product transport with active oil distribution, ensuring uniform frying across the entire product surface.

Unlike static frying systems, the product moves continuously through the fryer on a stainless steel conveyor. At the same time, hot oil is actively distributed over the product surface through a spraying or pouring system. This dual-action frying method ensures uniform heat transfer, even for products with irregular shapes or larger thickness.

A key technological advantage of this system is the rapid sealing of the product surface. As the hot oil is applied from both below and above, the pores of the product close quickly, reducing excessive oil penetration and helping maintain the desired internal structure. It also allows the juices and flavors within the product to be retained, instead of escaping into the oil. This results in improved texture, reduced oil uptake, and more consistent product quality.

The fryer is equipped with a frequency controller to adjust the conveyor speed, allowing the operator to adjust processing time in the frying zone depending on the product type and desired final characteristics.

Basic version

The basic version includes a continuous stainless steel fryer with a conveyor system (600 × 3500 mm), integrated electric heating system, oil circulation pump, oil filtration system, and an active oil distribution system for spraying/pouring oil over the product. The unit is mounted on a supporting frame and equipped with a control system for adjusting conveyor speed and process parameters.

Operating principle

The product is fed onto the conveyor and transported through the frying chamber at a controlled speed. During movement, the product is immersed in hot oil while additional oil is continuously sprayed or poured over its surface.

This ensures uniform heat transfer and rapid formation of a surface layer, which limits excessive oil absorption. The oil is continuously circulated through the system and passes through a fine filtration unit, maintaining consistent frying conditions.

After passing through the frying zone, the product is discharged for further processing such as cooling, deoiling, or packaging.
