The universal 1200 liter cooking kettle with a built in homogenizer is made out of high quality AISI 304 stainless steel and includes a three-jacketed construction with insulation. The stirrer can be supplemented with stainless steel scrapers that effectively wipe the product off the walls of the container to prevent product from sticking to the boiler walls and subsequent product burning as well as more efficient cleaning.
The boiler is triple-jacketed, the heating is provided by electric heating elements and is equipped with a PT 100 temperature sensor (which is used to control the product temperature and the heating liquid). Stirring of the product is ensured by a stirrer and homogenization is ensured with an integrated homogenizer. An essential part of this technology is the efficient cooling section, necessary for halting the cooking process after unloading. This function is also necessary when processing vegetables to the "aldente" state, when vegetables retain their structure and natural color after thermal treatment. This model provides heating by direct injection of purified steam into the heating section (steam generator - option).
