Infrared dryer for fruits and vegetables ID 3-7 m²
The ID 3-7 industrial infrared dryer is designed for fast and energy-efficient dehydration of a wide range of food products, including nuts, apples, plums, strawberries, raspberries, blueberries, mushrooms, carrots, onions, garlic, herbs, meat, figs, bananas, marshmallows, and many other products. Thanks to infrared drying technology, moisture is removed quickly while also helping preserve the natural color, aroma, texture, and nutritional value of the product. If additional options are selected, the dryer can also be used for curing and drying whole meat and fish.
- Compact installation
- Quiet operation
- Fast and energy-efficient drying
- Low energy consumption per drying cycle
- Individual drying settings for different products
- Compatible with standard GN 2/1 grids and trays
- Expandable drying capacity up to 20 drying levels
- Made entirely from food-grade stainless steel
A dehydrator is the simplest preservation method that allows you to extend the shelf life of raw materials without special additives and stabilizers, while retaining most of the useful substances. “Cold drying” also preserves the vitamins of fresh products. This device can be used to make snacks like fries, beef jerky, and more.
Drying is one of the oldest and most effective methods of food preservation, extending shelf life without the need for preservatives or stabilizers while maintaining most of the product's natural nutritional properties. Using the "cold drying" method, the infrared dryer helps preserve vitamins, color, aroma, and flavor that are often affected by conventional high-temperature drying.
Unlike traditional hot-air dryers that first heat the surrounding air, infrared drying transfers energy directly into the moisture contained within the product. This allows for shorter drying times, improved energy efficiency, and more uniform drying while reducing unnecessary heat losses. The dryer can be used to produce a wide range of value-added food products, including fruit chips (frips), vegetable snacks, jerky, dried herbs, teas, mushrooms, confectionery products, and many other dehydrated foods.
A universal dryer with infrared emitters is suitable for drying:
- Root vegetables
- Vegetables
- Fruits
- Berries
- Meat
- Mushrooms
- Fish
- Herbs
- Tea leaves
- Seasonings
- Medicinal plants
- Nuts
Thanks to optional deep GN 2/1 trays, it is also suitable for drying products that cannot be placed directly on GN 2/1 grids, including:
- Gels
- Marshmallows
- Bulk products, e.g. activated carbon
- Other loose materials
Standard GN 2/1 Compatibility
One of the main advantages of the ID 3-7 infrared dryer is its compatibility with standard GN 2/1 gastronorm grids and trays.
Many commercial kitchens, food manufacturers, and HoReCa businesses already use GN containers throughout their production process. The dryer allows operators to use their existing GN 2/1 grids or trays immediately without purchasing proprietary accessories. Additional trays or grids can also be purchased at any time from catering equipment suppliers, making future expansion simple and cost-effective.
The standard configuration includes:
- 10 GN 2/1 drying grids
- 0.345 m² drying area per grid
- Total drying area of 3.45 m²
For increased production capacity, the dryer can be expanded to accommodate up to 20 GN 2/1 grids, providing a maximum drying area of 6.9 m².
Advantages:
- Natural preservation method without preservatives or stabilizers.
- Helps preserve vitamins, nutrients, natural color, aroma, and flavor, especially when using the "cold drying" method.
- Drying is approximately 20 times faster than natural drying and up to 3 times faster than conventional convective drying.
- Medium-wave infrared (MWIR) emitters transfer energy directly into the moisture within the product, minimizing overheating of the surface and helping preserve cellular structure.
- High energy efficiency, as infrared energy is directed primarily into the product instead of heating large volumes of surrounding air.
- Average drying temperature of approximately 60°C, supporting gentle dehydration while maintaining product quality.
- Compatible with standard GN 2/1 trays and grids.
- Expandable drying area from 3.45 m² to 6.9 m².
- Mirror-polished stainless steel interior improves infrared energy utilization.
- Suitable for producing fruit chips, vegetable snacks, herbs, teas, jerky, mushrooms, dried fruits, confectionery products, and many other dehydrated foods.
Basic version
The standard version consists of a double-wall stainless steel cabinet with thermal insulation and a mirror-polished interior that helps maximize the utilization of infrared energy. It is equipped with medium-wave infrared (MWIR) heating elements positioned above the drying levels, an air circulation fan for efficient moisture removal, and a digital control panel with adjustable drying parameters. The dryer is supplied with 10 standard GN 2/1 drying grids, providing a total drying area of 3.45 m², which can be expanded by adding additional GN 2/1 grids or trays as production requirements increase.
Options:
- Additional GN 2/1 grids or trays (up to 20 drying levels)
- Deep GN trays for bulk and semi-liquid products
- Non-stick drying grids
- Accessories for curing and drying whole meat or fish
