Operating principle

Pistachio nuts are fed into the colloid mill, where high shear forces between the rotor and stator break the kernels into an ultra-fine paste.

Some recipes may require homogenization and stabilization of the paste. For a more uniform texture, the paste can be passed through the colloid mill several times.

Emulsifiers (lecithin) or oils (e.g. neutral vegetable oil) can be added to improve spreadability and prevent separation.
