Caramelization begins with the dissolution of sugar at high temperatures, followed by a boiling phase in which the sugars interact with water after evaporation. These chemical reactions produce an attractive color and taste, which, in addition to being the classic production method for caramel utilized in the confectionery industry, is also used for the production of food colorings from cola to soy sauce or in the production of various types of sweets. You can use the device for the caramelization of fruits, meat and onions at a professional level.
The cooking kettle is available in 50 and 100 l volumes. Contact heating allows for cooking at up to 120 °C. The unit is equipped with a mixing device with a drive and stainless steel scrapers that help prevent burning.
The caramel cooking kettle can be supplied separately or with a heating element (Induction hob).
The device is made out of stainless steel AISI 304.

The stainless-steel mesh basket is available as an optional accessory for processing products containing solid pieces. It can be used for pasteurizing jars, cooking batch products or for infusing ingredients such as fruit pieces, spices or other solids, while keeping them contained and allowing the liquid or syrup to circulate freely. After processing, the basket can be easily removed from the kettle, simplifying the separation of the cooked ingredients from the liquid product.
