Caramelization begins with the dissolution of sugar at high temperatures, followed by a boiling phase in which the sugars interact with water after evaporation. These chemical reactions produce an attractive color and taste, which, in addition to being the classic production method for caramel utilized in the confectionery industry, is also used for the production of food colorings from cola to soy sauce or in the production of various types of sweets. You can use the device for the caramelization of fruits, meat and onions at a professional level.
The cooking kettle is available in 50 and 100 l volumes. Thanks to contact heating, it allows for cooking at up to 220 °C. The unit is equipped with a mixing device with a drive and scrapers that prevent burning.
The caramel cooking kettle can be supplied separately or with a heating element (Induction hob).
The device is made out of stainless steel AISI 304.
