The principle of operation of the unit is the separation of alcoholic wine into non-alcoholic wine and high-strength alcohol, suitable for the production of brandy.

The separation of liquids is carried out under vacuum, which helps preserve the color and aroma of the beverage. Producing non-alcoholic wine at atmospheric pressure is quite complex, as the classical alcohol removal process often disrupts the flavor balance and removes some of the aromatic compounds.

The vacuum unit is equipped with a stirrer, a heat transfer jacket on the bottom and walls of the vessel, a vacuum system, and a transparent viewing window on the lid for visual monitoring of the process.
