This equipment model is a universal system, which can be used to produce extracts from products like carobs, as well as to boil them under vacuum conditions to obtain a thick syrup through a sequential circulation process.

The extraction system for the production of syrup (pekmez) from carobs is a compact device that allows for the extraction of plant materials, and also the concentration process to obtain a thick consistency in a vacuum environment.

The special feature of this vacuum evaporation unit is a special type of circulation heating and evaporation system, which at the first stage - during extraction, creates all the conditions for soaking and extraction using running water, but also heating the plant extract in the flow to increase the efficiency of the extraction process.

Suitable for the production of carob extract, and the production of other tinctures, syrups - pekmez / bukmez.

Pekmez is a sweet thick syrup from the carob tree. It is produced by boiling down the plant extract from the carob tree. This product is used both in cooking and as a medicine for colds or respiratory diseases. It contains a large number of vitamins, amino acids, it is produced without adding sugar, and is considered a dietary product, approved for use by diabetics.

  • One compact unit for several processing functions: extraction, heating the product in the flow, cooling, evaporation. You do not need to buy several devices, all technological operations for the production of pekmez can be carried out sequentially in one unit!
  • The extraction process can occur either by long-term soaking of the product in the mesh basket of the unit, or, using a more effective method, utilizing flow circulation of the solvent through the plant extract. To increase the intensity of the process for specific recipes, the unit allows extraction with heating of the solution in the flow, which reduces the risk of local overheating in the product mass.
  • An important stage in the production of carob extract is the process of cooling the product after extraction. To reduce the risk of contamination of the product, it is necessary to cool it, for this purpose the extract is usually drained and placed in refrigeration chambers. When using our unit, you do not need to carry out additional procedures, it is enough to just feed the coolant (cold water with a temperature of 5-7 degrees) into the unit jacket (duplicator). The entire cooling process can be carried out under vacuum, which guarantees increased efficiency of the process, but also its hygiene by avoiding air bubbles with potential contaminants.
  • Vacuum evaporation and concentration allow for the preservation of most of the useful substances and vitamins in the product, and thanks to the vacuum guarantees high hygienic standards, reducing the risk of possible contamination of the product during the production process.
  • Highly efficient cooking is carried out using a remote heat exchanger with direct heating of the product in the flow. This allows maximum use of the heater power, while avoiding the degradation and local overheating of the product. The unit is equipped with product temperature sensors in the flow for smooth regulation of the heating temperature.
  • A special heat-insulated upper body of the unit is designed specifically to reduce the volume of "parasitic" condensation on the inner surface of the hatch. This also increases the efficiency of evaporation.
  • The principle of operation of the unit is based on the process used in large industrial lines, where systems as product capture are also used to reduce losses during evaporation. Secondary steam can carry away part of the product, for this purpose our evaporation units are equipped with special traps that separate steam and product, and return the latter to the system for evaporation.

Operating principle

The product (crushed carob fruits) is loaded into the basket and placed in the working container. To obtain the extract, water is added; extraction can be performed in stagnant water or in flowing water through the external circulation circuit. Depending on the temperature requirements, the unit allows for heating the solution during the extraction process. After obtaining the required consistency of the extract, it is enough to pull out the basket with the plant material, and the extract, if necessary, can be cooled by feeding a coolant (cold water) into the jacket of the unit (duplicator) from an external source, or proceed to the process of boiling under vacuum down to the required consistency.

This type of unit is a hybrid of a circulating vacuum evaporator and an extraction unit. The circulating type evaporation unit is one of the most efficient models of vacuum evaporators. With a heating power of 36 kW, it allows achieving a productivity of up to 45 l / hour for when using water!

It consists of a vacuum vessel on a supporting structure with a jacket and an external circulation circuit, a circulation system pump, a heat exchanger for direct heating with a capacity of 36 kW (in the basic configuration), a vacuum system (an ejector using compressed air), an insulated upper body, a sampling system (for monitoring the density of the product), a special basket for soaking and extraction, and controls (heating system and pump).
