Double jacketed electric cooking kettle 50 L
The electric jacketed cooking kettle with a 50 L capacity is designed for batch processing of food products using indirect water heating. Its tilting vessel, integrated water heating system and bottom-mounted geared mixer provide controlled heating and continuous product movement (the thermal jacket can also be used for cooling). The tilting mechanism with 13 locking positions allows gravity-assisted mixing as well as product discharge at an angle of up to 110°.
- 50 L working capacity
- Indirect heating and cooling through a thermal jacket
- Optional integrated electric water heater, available in 3, 6 and 9 kW versions
- Bottom-mounted geared mixer with motor power up to 0.25 kW
- Tilting vessel with 13 locking positions and a maximum angle of 110°
- Mobile four-wheel frame with brakes
The 50 L electric jacketed cooking kettle is designed for batch processing of food products that require controlled heating, cooking or cooling. It combines a tilting stainless steel vessel mounted on caster wheels for added mobility, an optional electric water heating system and an automatic mixing system. Hot water circulates through the thermal jacket (duplicator) surrounding the working vessel, transferring heat to the product indirectly through the vessel walls.
With its 50 L capacity, mobile design and built-in mixing system, the kettle is suited to smaller-scale food production as well as use in restaurants, cafeterias, catering kitchens and HoReCa facilities.
Unlike direct electric heating, this arrangement does not expose the product to heating elements or a concentrated heat source at the bottom of the vessel. The distributed heat transfer helps reduce local overheating and product scorching, which is particularly important when processing thick, viscous or heat-sensitive mixtures.
Suitable Products and Applications
The kettle is suitable for preparing a variety of liquid and semi-viscous food products, including:
- Sauces, gravies and dressings
- Soups and vegetable preparations
- Jams, marmalades and fruit fillings
- Syrups and sugar-based mixtures
- Creams, custards and dessert fillings
- Pastes and spreads
- Ketchup and other cooked condiments
- Other products requiring controlled heating
Indirect heating is particularly useful for products containing sugar, starch or proteins, which may stick to heated surfaces or deteriorate when exposed to excessive local temperatures.
Indirect Heating Through a Thermal Jacket
The cooking kettle uses an integrated electric flow-through water heater to heat the water circulating through the thermal jacket. The jacket surrounds the working vessel, allowing thermal energy to pass through the stainless steel wall and gradually heat the product inside.
Since the heating elements are separated from the product, heat is distributed over the jacketed surface instead of being concentrated at a direct contact point. This reduces the risk of burning, sticking and product buildup on the heated surfaces. It also provides more controlled heating for recipes that require gradual temperature increases.
An electric water heater can be supplied as an optional component in 3, 6 or 9 kW configurations. The required heating power depends on the product, batch size, initial and target temperatures, and desired heating time. Alternatively, the kettle can be connected to an existing external hot water heating system.
Heating and Cooling in One Vessel
The thermal jacket can also be used for cooling by supplying cold water instead of hot water. The circulating water absorbs heat through the vessel wall, allowing the product temperature to be reduced in the same kettle without transferring it to separate equipment.
This is useful for production processes involving successive heating and cooling stages, such as cooking a sauce or fruit preparation followed by cooling before further processing or packaging.
Cooling performance depends on the supplied water temperature, flow rate, product properties and circulation conditions. A suitable cold-water supply and connection to the thermal jacket are required.
Integrated Mechanical Mixing System
The cooking kettle is equipped with a mechanically driven mixing system mounted beneath the working vessel with a vacuum seal, powered by a geared motor with an output of up to 0,25 kW. The mixer maintains continuous product movement during heating and processing, helping distribute ingredients and maintain a more uniform consistency throughout the batch.
The geared drive provides the torque required for mixing liquid and semi-viscous products. The combination of the tilting design, mechanical mixing and gravity-assisted product movement facilitate effective product circulation and eliminate the need for manual stirring during operation.
Tilting Vessel and Gravity-Assisted Mixing
The working vessel can be tilted by up to 110°, allowing convenient discharge of the processed product. The inclined position also supports gravity-assisted mixing: as the vessel is tilted, the product moves under its own weight, promoting natural circulation and redistribution throughout the batch.
This movement can help improve product turnover during processing, particularly when working with mixtures that flow under gravity. The tilting mechanism also provides better access to the inside of the vessel for emptying and cleaning.
The vessel can be tilted by up to 110° for fast and convenient product discharge. Unlike emptying through a fixed outlet valve, tilting allows the product to flow out through the open vessel, making discharge considerably faster, particularly for thick, viscous products that may drain slowly through narrow outlets. This also provides easier access to the vessel interior for cleaning after processing.
Mobile Construction
The kettle is mounted on a supporting structure equipped with four wheels, allowing it to be moved within the production area. The electric water heating unit is integrated into the lower part of the frame, keeping the heating system and working vessel together in one mobile assembly.
Advantages
- Indirect product heating: Water circulates through the thermal jacket, transferring heat through the vessel walls without direct contact between heating elements and the product.
- Reduced risk of scorching: Distributed heat transfer helps prevent local overheating and product burning.
- Heating and cooling capability: The same thermal jacket can be supplied with hot or cold water, allowing both processes in one vessel.
- Gravity-assisted product movement: Tilting the vessel into intermediate positions promotes natural product circulation and redistribution.
- Convenient discharge: A maximum tilting angle of 110° supports quick and simple product emptying, which is especially useful for thick and viscous products.
- Mobile construction: Four wheels allow the kettle to be repositioned within the production area.
