Frying methods
The deep fryer combines the possibility of immersion frying and as well as pouring with oil. These methods are effectively used for frying large pieces of meat or fish products, where high quality frying is a must. Hot oil forms a layer on the surface of the product, intensive circulation of oil between the product and the heating source maintains a uniform set temperature throughout the frying zone.
A smart heat exchange system ensures frying efficiency as if the product is constantly stirred in hot oil. The system operates with a low oil volume, which significantly reduces the manufacturer's costs associated with the replacement and disposal of used oil.
Intensive oil circulation and constant filtration ensure unsurpassed frying quality while still maintaining all operational advantages.
The CombiFry fryer is equipped with oil filters that purify the oil as it circulates during the frying process. Multi-stage stainless steel filters continuously remove fine product details, allowing the operator to visually determine the degree of contamination of the filter and the need to clean it. The filter can be cleaned while the unit is still running, the oil filtration continues through the second double filter.
The intensive oil circulation between the heat exchanger and the product, as well as the precise temperature control, prevent the oil from overheating, keeping the beneficial properties of the product intact.
