It can hold up to 15 jars (1L) at a time, using the second shelf, you can place the jars on top of the first batch for a total of 2 layers. There are two shelves for canning. You can put one on the bottom of the pasteurizer so that the jars are not exposed to direct heat, and the other on top pf the first layer of jars to create another level.
