A cooking kettle and a vacuum mixer for periodic deaeration of products such as mayonnaise, ketchup, various sauces, creams, gels and pastes. It is one of the modifications of a vacuum reactor and a vacuum evaporator. The presence of a vacuum system allows you to create a vacuum after the cooking process and perform vacuuming (deaeration) to remove air bubbles with potential contaminants and obtain a product with a denser structure. Thanks to vacuuming, the product has an extended shelf life, since pathogens and microbes contained within are removed together with the air.

The cooking kettle is a universal solution for mixing, stirring and heat treatment of flowing, thick and viscous products. Due to the presence of a heating / cooling jacket and the appropriate thermal transfer medium like hot or cold water, it is possible to heat or cool the products. The presence of a vacuum system allows for stirring, mixing and cooking the product as well as subsequent deaeration (vacuuming).

A mixing kettle with an external heating / cooling function using a heating jacket (duplicator) and deaeration (vacuuming) based on a vacuum reactor. It is convenient for fast and effective deaeration of products such as:

  • mayonnaise
  • mousse
  • honey
  • ointments
  • ketchup

  • juice

Advantages

  • During the atmospheric cooking process, juices and liquids remain in the product, syrup does not concentrate and lose its volume, while the vacuum system allows you to get rid of foam and bubbles that occur during thermal processing. If it is necessary to cook or evaporate the product under vacuum, the cooking boiler for deaeration can be modified into a vacuum evaporation unit by adding a few additional options such as a condenser.
  • A special gravity mixing system is designed for thick and viscous products, due to the inclination of the working container, the mixer blades mix the product flowing to the lowest hydraulic point, thereby not only mixing it effectively, but also improving heat transfer inside the product.
  • The inclined design ensures uniform processing of the product during heat treatment through the heating/cooling jacket for the bottom and walls of the unit.
  • The basic version of the cooking kettle includes a bottom valve which allows you to fully drain the finished product. The product is processed without dead zones and corners.
  • Processing without product loss is possible thanks to the bottom valve and inclined structure while the mixing device is turned on, 100% of the product is unloaded regardless of its density.

Basic version

It consists of an inclined vacuum reactor on a supporting structure, equipped with a jacket for the thermal transfer medium up to 0.5 bar, an upper hatch, a mixing device with an electric drive, a vacuum system with an ejector for compressed air, a temperature sensor and a smooth start for the mixing device.

Operating principle

Mixing under vacuum - periodic vacuuming reduces the level of foam after processing, draws air bubbles out of the final product, thereby extending its shelf life and stability.
